1. Mushroom pâté

Ingredients:
- 1 onion
- 500g of mushrooms (sliced)
- 1 tablespoon of tahini
- 80ml olive oil
- Salt, garlic or spices to taste
Cut the onion and slice the 500g of mushrooms. Place them together in a tray and put them in the oven at 180º for 15 minutes. Once this time has passed, place the mushrooms and onion in the blender. Add a tablespoon of tahini (sesame butter), 80 ml of olive oil, salt, garlic or your favorite spices. Blend, and it is ready. We can spread this delicious pate on toast, bread sticks with cereals or with any vegetable (carrots, celery, etc.).
2. Bruschetta with cream cheese and cherry tomatoes
An easy to make recipe but with a rich flavor to please your guests. Another delicious starter.
- Ingredients
- Bread, toast or square crackers
- Cherry tomatoes
- 2 tablespoons mayonnaise
- 2 tablespoons cream cheese
- Chives
- Cilantro
- Arugula leaves
- Olive oil
The first thing to do is the "dip". Mix the two tablespoons of mayonnaise and the two tablespoons of cream cheese and add the chives. Mix it again with the cilantro. We cut the bread into slices, although it is also possible to use toast or crackers, and toast it in the oven at 150º with some olive oil. Cut the cherry tomato into slices and, finally, make the bruschetta: place the dip on top of the bread and then the cherry tomato. On the other hand, mix the olive oil with the arugula and add them to the bruschetta in small quantities.
3. Christmas quinoa with hazelnuts, apple and cranberries.
Ingredients:
- 1 cup quinoa
- 2 cups of water
- 2 cups hazelnuts
- ½ cup cranberries
- 1 apple
- ¼ onion
- 2 celery sticks
- Lemon
- 1 tablespoon olive oil
- Parsley
- 5 cambray onions
- Salt and pepper
Rinse the quinoa and clean it. Place it in a pot, add salt and let it cook for 15 minutes. On the other hand, heat the tablespoon of olive oil and fry the celery and the chopped onion for two minutes. Add salt and pepper and cook for three more minutes. Remove from the heat and add the parsley, the cranberries and the green part of the green onion cut into fine pieces. Chop the apple and add it as well. Squeeze the lemon over these ingredients. Finally, add the cold quinoa and the chopped hazelnuts and the olive oil, salt and pepper.
4. Eggplant cannelloni
A Christmas classic. Just substitute the meat for vegetable ingredients. A very healthy recipe.
Ingredients:
- Olive oil
- 1 large onion
- 3 cloves of garlic
- 6 tomatoes
- Pepperoncino
- Basil
- Oregano
- Laurel
- Salt and pepper
- 1 cup of ricotta cheese
- Mozzarella cheese
- 4 black olives
- 2 tablespoons of chopped fresh basil
Place the olive oil in a saucepan and mix it with the garlic and onion and sauté it. Add the chopped tomatoes to the sauce after 5 minutes of cooking and mix it with basil, oregano, bay leaf, peperoncino, salt and pepper. Let it cook for 5 minutes and then lower the heat and cover. This will be the sauce.
Soak the eggplant for 5 minutes and grill or broil until golden brown on both sides. For the sauce, mix the ricotta cheese, black olives and fresh basil and add a little salt and pepper. Once mixed, we place it on the thinnest part of the eggplant and roll it up. Then add the sauce and place the mozzarella cheese on top. Bake it for 35 minutes on broil. It is ready.
5. Potato soufflé
A delicious light dish prepared in the oven for vegetarians and vegans.
Ingredients:
- 4-5 Potatoes
- ⅓ cup nutritional yeast
- ⅓ cup quinoa flour
- Carrot
- Broccoli
We rinsed the potatoes and peeled them. Then we cut them into fine pieces. Boil them for about 20 minutes so that they are well cooked. Drain and mash them without mashing them into a puree. Add the carrots, broccoli, nutritional yeast and quinoa flour and mix. Add pepper and place it in the oven at 250º for about 15 minutes. It is ready to eat.
6. Oatmeal and ginger Christmas cookies

Ingredients:
- 1 cup oatmeal
- whole wheat flour
- flaxseed or flaxseed meal
